I had the baking bug this morning, so I decided to make some apple muffins to deal with our surplus of apples. I chose the recipe based on how many of the ingredients I actually had laying around. I still made a lot of changes, so here is my modified recipe.
Ingredients (Makes 12)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 cup oil
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups chopped apples
- Topping:
- 1/3 cup packed brown sugar
- 1 tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
Directions
- Preheat oven to 375 F
- In medium bowl, mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon
- In a large bowl, beat together oil, sugar, and eggs until smooth. Mix in vanilla. Stir in apples then gradually blend in the flour mixture.
- Spoon the batter into a muffin pan
- In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter until the mixture is coarse crumbs. Sprinkle over tops of batter in the muffin pan.
- Bake for 20 minutes.

That’s great! Those are one of my favourites, though I think I like banana chocolate chip even a little bit more (so I’ll have to get around to posting that recipe).
Wow they’re really good! I thought they were gonna be dry since the batter was very thick but they turn out perfect!
