Apple muffins

I had the baking bug this morning, so I decided to make some apple muffins to deal with our surplus of apples. I chose the recipe based on how many of the ingredients I actually had laying around. I still made a lot of changes, so here is my modified recipe.

Ingredients (Makes 12)

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 cup oil
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups chopped apples
  • Topping:
    • 1/3 cup packed brown sugar
    • 1 tablespoon all-purpose flour
    • 1/8 teaspoon ground cinnamon
    • 1 tablespoon butter

Directions

  1. Preheat oven to 375 F
  2. In medium bowl, mix flour, baking powder, baking soda, salt, nutmeg, and cinnamon
  3. In a large bowl, beat together oil, sugar, and eggs until smooth. Mix in vanilla. Stir in apples then gradually blend in the flour mixture.
  4. Spoon the batter into a muffin pan
  5. In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter until the mixture is coarse crumbs. Sprinkle over tops of batter in the muffin pan.
  6. Bake for 20 minutes.

  2. That’s great! Those are one of my favourites, though I think I like banana chocolate chip even a little bit more (so I’ll have to get around to posting that recipe).

  3. Wow they’re really good! I thought they were gonna be dry since the batter was very thick but they turn out perfect!
