Raspberry muffins

Ingredients

  • 2/3 cup of vanilla yogurt
  • 2 tbsp oil
  • 3 tbsp lemon juice
  • 1 tbsp ground flax + 2 tbsp boiling water (this is an egg substitute)
  • 3/4 whole wheat flour
  • 3/4 all purpose flour
  • 1/2 cup white sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup of fresh raspberries
  • Topping:
  • 1/4 cup flour
  • 1/4 quick oats
  • 3 tbsp sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 2 tbsp butter

Directions

  1. Preheat oven to 400 degrees F
  2. In a large bowl, mix together yogurt, oil, lemon juice, and egg substitute.
  3. In a separate bowl, mix together the dry ingredients
  4. Add the wet ingredients to the dry and stir until just mixed, then gently stir in the raspberries
  5. Sprinkle the streusel mixture on top
  6. Bake for 16 minutes
